These loaded nachos don’t even make it to a plate, they get eaten straight from the tray. To make these beauties you will need an Actifry. The trick is to make your chips from tortilla wrap and cook in the air-fryer before sticking in the oven with your toppings to melt the cheese and heat further.

We make our salsas and guacamole fresh, but if you’ve had a long day, throw on some shop-bought, you’re gonna love the nachos either way.

You will need access to an Actifry or air fryer to make the chips for these nachos

Ingredients

  • 1 bag of round tortillas – use 2 tortillas per person
  • 1/2  red onion, sliced
  • Guacamole (fancy making your own? Here’s a recipe for you)
  • Salsa (here’s a recipe making your own)
  • Sour cream (Or Oatly vegan creme fraiche for vegan alternative)
  • Mozzarella or vegan cheese alternative
  • A few tbsp of vegetable oil

Instructions

Prep
  1. Chop the onion into long slices
  2. Assemble your guacamole if making from scratch
Cook – to make the tortillas
  1. Heat the oven to 180C (gas mark 4 / 350F)
  2. With a brush, coat each side of the tortillas in oil (we use olive oil). The stack em’ up.
  3. Chop the tortillas in half, half and half again until you have 8 slices. Then cut each eighth into a tri-force (yes, like in the Legend of Zelda).
  4. Put your tortillas in the Actifry. No need to add oil. Cook for 6 minutes or until most of the tortillas are crispy.
Assemble
  1. Put half of the tortillas in a baking tray. 
  2. Sprinkle some of your sliced red onion, salsa and cheese on the tortillas. Then add the rest of the tortillas on top and more salsa, cheese and onion.
  3. Put in the oven for 6-8 minutes.
  4. Once out of the oven, spoon your guacamole and sour cream on.
  5. Sprinkle some spring onions and peppers on top then serve straight from the tray.
